I love Siu Yuk from restaurants and have tried multiple times to make it at home with varying degrees of success, but it's never the same. I have been experimenting with pressure cooking recently, so I thought I would try a version using this technique. It turned out really well. I would like the skin to be a bit more bubbly, I will update the recipe if I manage this next time!
A couple of tips, I used a piece of equipment that has an air fryer included, but you could easily do the browning of the skin in the oven.
Secondly, I used a sharp knife for cutting it up at the end, but it didn't look great. Definitely, time to invest in a proper cleaver.
Lastly, I would purchase the Pork belly from your local Asian supermarket if you can. Pork Belly from these establishments is cut to better suit cooking Asian dishes (it has more meat on). The UK supermarket pork belly is generally quite thin.
Ingredients and spices that need to be Prepare to make Chinese Roast Pork (Siu Yuk):
- 750 g Pork belly
- 250 ml Water
- 3 tsp 5 Spice
- 1 tsp Salt
- 1 tsp Sugar
- 1.5 Tbsp Soy Sauce
- 0.5 Tbsp Rice Wine
- 3 Garlic cloves (minced)
Steps to make Chinese Roast Pork (Siu Yuk)
- Get your pork belly and remove any bones. Cut into pieces so it will fit in the pressure cooker


- Add the ingredients to the pressure cooker and mix well. Place the pork belly in the pressure cooker.
Set the pressure cooker to 15 mins on high pressure with natural release of the pressure. (Should take around 15 mins).


- Once the pressure has finished releasing remove the pork belly carefully and allow to cool slightly. Once cooled, either using a meat tenderiser, or a fork (which I used), poke lots of holes in the skin everywhere. This is to help extract moisture, giving a crispier skin



- Once fully cooled, add a lot of salt to the top (a few mm high), and put in the fridge. This will help to extract the moisture. Keep in the fridge a minimum of 3 hours, preferably overnight.

- Once finished in the fridge, remove and wipe all the the salt and moisture off the skin and wrap foil around the meaty part, leaving the skin exposed


- Put in an AirFryer (or grill) and crisp the skin using that method. It was around 20mins at 200 degrees C in my AirFryer.
Be sure to keep checking on the pork belly while crisping as it can turn from being just right to being burnt quite quickly!

- Chop and serve! (See note above regarding cutting). I served with an asian crunchy salad (Wom Bok etc) with a seasame dressing
